SWEDISH PANCAKES!

This is probably our all time favorite breakfast! 
We love these things. They are very similar to crepes, but easier to make.

It really helps to have a crepe pan, like this:




but, if you don't have one, an omelette pan or just a regular skillet will work.
Here are the easy, breezy ingredients:
2 cups milk
2 cups flour
2 eggs
dash of salt

(this will yield about 25...)

Put all that in a blender, and blend until it is all mixed.

Heat your pan and then melt butter in it, covering the pan...


Pour the batter into a circle in the middle of the pan, and then tip and swirl the pan,
 so that the batter spreads out and forms a circle the size of the pan.


Let it cook until the edges are starting to lift and are brown, then flip and cook on the other side.


I like to serve them hot off the skillet onto a plate...

My kids fill them with whipped cream, jam or pie filling:



 Roll 'em up, pour a little warm maple syrup over (recipe below),
and voila!




Delicious!


My Momma's Hot Maple Syrup:

2 cups sugar
1 cup water
1 TBSP Maple flavoring (less if not imitation)




Mix all ingredients in medium sized sauce pan, bring to boil,
reduce heat and simmer for about 2 minutes. Careful not to let it boil over!
Remove from heat and serve over pancakes.



**Don't forget to make yourself a plate...it takes a while to cook all these yummy crepes 
and by the time you are finished cooking...they'll all be eaten!**

Swedish pancakes are one of our favorite breakfasts too! A good friend of mine served her mission in Sweden and the recipe she gave me is pretty close to yours. We do a cream cheese filling and top ours with strawberries, though. This sounds like a tasty variation- we'll have to give it a try!
