FALL!

love 
this time of year! 
The colors, the cooler air, the yummy, delectable treats!

Allow me to introduce you to this delicious concoction, called 
Almond snack mix!

It is one of our favs for fall...

And everytime I make it for people, they ask for the recipe.

So, here it is!


Mix together in a large bowl:
  • 1 box (12.9 oz) Rice Chex cereal
  • 2 3/4 cups sliced almonds

Set aside. Combine the following ingredients in a medium size saucepan:
  • 1 cup sugar
  • 1 cup light corn syrup
  • 3/4 cup butter
Bring to boil over medium heat, stirring occasionally until mixture has almost reached soft ball stage.
(I don't know about you, but I can never seem to get an accurate reading on a candy thermometer, so I like to use the cold water test method instead...)


Add a bit of ice cold water to a glass measuring cup,  spoon a little of the candy mixture into the water, and if it all stays together and you could begin to shape it, it's ready.



**Careful! It's sooo hot!**

Remove fom heat, stir in

  • 1 tsp. almond extract
Pour over cereal; mix well. Spread onto waxed paper, allow to cool.

Break apart into bite sized pieces. Store in airtight container. 

YUM! 

Now, put a little into some plastic baggies, make a cute paper label and take some to your neighbors. 
They'll love you in an instant!
